Fall recipes

Do you love fall recipes and yummy snacks but don't know how to cook, or don't have an excuse? Well, you have one now. I compiled a list of fall recipes that are classic and easy to make, complete with amounts and instructions. These recipes are special to because they speak to me and say "FALL!". They might not be the basics like apple pie and snicker doodles, but they are equally as tasty and easier to make  Now you can jump on the baking bandwagon with me. Hop on! 

Applesauce Yogurt Cups 

NEED: Applesauce, yogurt (plain, vanilla or honey sweetened), crushed graham crackers (about four full crackers), 1/4 teaspoon cinnamon 

RECIPE: In a small bowl, mix your crushed graham crackers with cinnamon. You can add more later if needed. Mix thoroughly and set aside. Next, pour a little of the applesauce into a mason jar. It can be as much as you want. Next, take your crushed graham crackers and pour some in. Push down with a spoon until firm. Then, pour in a layer of yogurt. Add in some crushed graham crackers. Press down with spoon until firm. Repeat these steps until mason jar is full. Refrigerate and enjoy!


Stove Apple Cider 

NEED: apple juice, 1 teaspoon cinnamon and 1 teaspoon nutmeg OR cinnamon sticks 

RECIPE: Fill a medium saucepan almost all the way with apple juice. Bring to a simmer over medium low heat. Simmer cinnamon sticks for 3 min OR add 1/2 to one full teaspoon of nutmeg and cinnamon (1/2 of each).  Add more if desired. Enjoy while hot for best taste. Can be reheated. 


Caramel Frappuccinos 

NEED: 2 cups ice, 1 cup milk, caramel (check out the recipe below), 1/4 cup sugar, 1 teaspoon vanilla extract, 1/2 cup dulce de leche ice cream, whipped cream (optional)

RECIPE:  Blend milk and ice until smooth. Add in sugar. Blend. Add in ice cream and vanilla. Blend well. You can adjust measurements to your liking. Drizzle the sides of a cup with caramel sauce. Pour in frappe. Top with whipped cream if desired. Drizzle caramel over top, and ta-DA!


Caramel Sauce

NEED: 1 cup sugar, 2 tbsps corn syrup, 2 tbsps water, 1/2 cup heavy cream, 2 tbsps butter, 1 tsp vanilla, lemon juice

RECIPE: Microwave sugar, water, corn syrup, a few drops of lemon juice in a small bowl. Mix before putting in microwave. Microwave for 5 minutes or until caramelized and light amber in color. Mix and let cool. Use fast, as it hardens quickly. Enjoy when warm. 

Peanut Butter Cookies 

NEED: 1/2 cup granulated sugar, 1/2 cup packed brown sugar, 1/2 cup peanut butter, 1/4 cup shortening, ¼ cup softened butter, 1 egg, 1 and 1/4cup flour, 3/4 tsp baking soda, ½ tsp baking powder, ¼ tsp salt 

RECIPE: Mix sugars, peanut butter, shortening, butter and egg in a large bowl and mix thoroughly. Stir in remaining ingredients. Put in a bowl and cover. Refrigerate for about 2 hours or until firm. Preheat oven to 375°F. Shape dough into balls. Place about 3 inches apart on an ungreased cookie sheet lined with parchment paper. Flatten in crisscross pattern with fork dipped in sugar. Bake for 9 to 10 minutes or until light golden brown. Cool for 5 minutes; remove from cookie sheet. Cool on wire rack. Enjoy while hot for best results. 
Apple Crumble

NEED: Crumble: 300g/10 and 1/2 oz plain flour, sieved; pinch of salt; 175g/ 6oz brown sugar; 200g/7oz unsalted butter at room temperature, cubed (plus a little for greasing) Filling: 450g/1lb apples, peeled, cored and cut into 1cm/ ½ inchpieces; 50g/2oz brown sugar; 1 tbsp plain flour, 1 pinch ground cinnamon 

RECIPE: Preheat the oven to 350F. Place the flour, salt and sugar in a large bowl and mix well. Rub a few cubes of butter at a time into the flour mixture. Keep rubbing until mixture resembles breadcrumbs. Place the fruit in a large bowl and sprinkle with the sugar, flour and cinnamon. Stir well, being careful not to break up the fruit. Butter a 24cm/9in ovenproof dish. Spoon the fruit mixture into the bottom, then sprinkle the crumble mixture on top. Bake in the oven for 40-45 minutes until the crumble is browned and the fruit mixture bubbling. Cool and serve warm.
